First we must chop in small dices the half onion, the green bell pepper and the clove of garlic. Once we have them, fry them in a frying pan. This should have enough oil to cover the whole bottom. We must stir the ingredients and be attentive so that they do not burn.

While the vegetables in the pan are cooking, we cut the zucchini into cubes. As the zucchini has a faster cooking time, we will add it once we see that the first vegetables begin to brown slightly. We must also add salt and pepper to taste.

Sauté all the vegetables over high heat, to avoid overcooking, until the zucchini is cooked. At this point add half a can of crushed tomato and stir for about 6 more minutes so that the tomato reduces and the vegetables finish cooking.

Once the ratatouille is ready, we are going to make the final dish. For this we will need a small casserole suitable for oven (although we will use it on the vitro ceramic hob). What we must do is to serve a portion of ratatouille in the casserole and crack an egg on it. Now we will put it on the fire at high temperature and we will cover it with a lid until the egg is done.

Once the egg is ready, the dish is finished! I recommend that you protect your table with a placemat because the casserole is very hot. It is a dish that can be served as dinner or lunch (depending on the size of the portions) and it is delicious, I hope you try it !!!! 😋
