Clean the cheeks of fat and membranes and season them with salt and pepper.

In the GM pot we put the fry menu, 20min, add oil and when it is hot we seal the cheeks. If it is the express pot put the oil to heat and seal the same.

When the cheeks are sealed, remove them, add more oil and fry the onion, garlic, leek and carrot.

Add the cheeks and the wine. I put about 250 ml of red wine and 80 ml of Pedro Ximénez and leave it for 10 minutes for the alcohol to evaporate.

In the GM cooker cancel, put the lid on, close the valve and program the turbo menu, 35 min., high pressure 140°. In pressure cooker put the lid on, close the valve and cook for 35 minutes from the moment the steam starts to rise.

After the time has elapsed, depressurize and remove the cheeks.

Grind the vegetables with the broth and mix it all together.
