✳ INGREDIENTS ✳ ▪︎ 60gr of chickpeas. ▪︎ Half an onion. ▪︎ Half a green bell pepper. ▪︎ Half a zucchini. ▪︎ 1 small carrot. ▪︎ Half a red bell pepper. ▪︎ 1 tablespoon curry. ▪︎ 40ml coconut milk. ▪︎ Pinch of salt.

We put the chickpeas to soak the night before, (you can use canned if you want and skip this step). Cook them for 45 minutes or until they are tender, drain and reserve. In a pot we throw the onion and the green bell pepper with a pinch of salt and poach for 10 minutes, add the curry and a little water, cook for 5 minutes and mash. We throw back into the pot the crushed sofrito, add also the chickpeas, the rest of the chopped vegetables and the coconut milk, if you want you can add more curry, let cook for 10 minutes and ready to eat. 😊💚
