We start by preparing the realfooding avocado mayonnaise (you have the recipe on the Realfooding Instagram, but it basically consists of beating 1 hard-boiled egg, half an avocado, a tub of fresh cheese, tuna oil, salt and pepper and a dash of lemon juice with a hand blender). It must be thick. Set aside.

Wash the endives and cut them into strips. Next, cut the strips into small cubes. We put it in a bowl or large deep dish.

To the same bowl, add a grated (or finely chopped) hard-boiled egg, the olives cut in half and the tuna.

Add the avocado mayonnaise, mix it all together and serve!
