VERY IMPORTANT!!! It is necessary to soak the quinoa 1 hour before in hot water or 3 hours in water of the time.

FILLING: Cut the vegetables into small pieces and add a little EVOO in a frying pan. When it is hot, first add the onion, then the mushrooms, the bell pepper and finally the tomato. When everything is more or less done, add the meat and spice to taste. In my case I added salt, pepper and oregano. Add the tomato sauce and let it rest while we make the tortillas.

TORTILLAS: Once the soaking time has passed, wash with water several times and grind together with 80 grams of water (in the recipe I have put 80 ml because it does not allow to select grams) and a little salt. Put a little EVOO in a non-stick frying pan and spread over the surface with a paper towel. When it is hot, add half of the mixture and spread with a spoon making a round shape and not too thick. Make sure it is uniform. Once we see that it begins to set, we turn it over and wait until it is done on both sides. While the omelet is cooking, preheat the oven to 200°C up and down heat. This process must be repeated with the other half of the mixture.

When the first tortilla is done, put it on a baking rack with baking paper and start filling. First we put mozzarella and the mixture of grated cheeses all over the base trying not to leave big holes and filling up to the edge. We put the meat covering the whole base of the tortilla and we add cheese again all over the surface. Finally, put the other tortilla on top to cover and press a little with your hands to make it "stick".

Bake for about 15' at 200°C heat up and down and enjoy!!!!

TIPS: ✅ You can substitute minced meat for minced chicken, tuna or tofu (same amount). ✅ For the tortilla, you can substitute the quinoa with: - 100gr chickpea flour and 185gr water. - 100gr of buckwheat and 90gr of water. -100gr of whole grain flour and 70-90gr of water. ✅ You can make the tortillas in the oven. Simply reduce the amount of water in the recipe a little and follow the same procedure as in a frying pan.
