Fry the salmon in EVOO or grill.

Boil pasta according to package directions.

Prepare the sauce: chop the onion and the clove of garlic finely. Sauté with the butter and a spoonful of EVOO. When browned, add the can of cooking cream. Add milk if more liquid is preferred. Season to taste with salt and pepper.

Add the chopped salmon and the pasta to the sauce. Grate Parmesan cheese on top and let it cook for about 5 minutes so that everything integrates (sometimes I add baby spinach just before adding the cheese).

Serve with more Parmesan and enjoy!
