Poach the onion and mushrooms.

You can cook the pumpkin in the oven (30-40 mins 180°) or in a steamer case for about 12 mins at maximum power.

Once the pumpkin is done, add to the pan and sauté with the mushrooms and onion. Add spices to taste.

Transfer to a food processor or blender and blend until it is to your liking. If it is too thick, add a little water (from cooking the pumpkin if you have made it in a case).

In a frying pan with a little oil brown the tofu. To flavor it there are many options, I like to add cumin with Provencal herbs, turmeric, soybeans ..... Whatever you like.

Serve the cream warm and add the tofu on top. Enjoy!
