Hydrate the dates with warm water for 15 minutes.

Put all the ingredients in the blender: oatmeal, coconut, tablespoon of coconut oil, zest of 1 lemon and the previously hydrated dates (I did not leave them long enough and that is why in the image there are little pieces of dates).

The dough is very thick. Put it on a piece of parchment paper and cover it with another piece of parchment paper. With the help of a rolling pin, knead it to make it thin and shape it into a cookie with a glass.

Repeat the process with the remaining dough until you have 16-20 cookies.

Bake in the oven for 20 minutes. Halfway through turn them over so that they are crispy on both sides.
