Zucchini omelet with cheese

🔪In this case, I used a round zucchini, similar to pumpkin but with zucchini flavor. It has very little caloric contribution and provides a lot of water 💧The first thing is to wash it well and cut it into small pieces.

We put a paella pan on the fire with a drizzle of oil and when it is hot add the onion cut into small pieces, too. When we see that it is browning, add the diced zucchini. High heat and keep stirring 🥄.

In a bowl we beat the eggs and when we see that the vegetables in the paella are tender, we add them. It is at this moment that I add the salt, but it is not important, it is to taste. Finally, we add the cheese that we do it in pieces. And we move everything so that all the ingredients are well integrated.

❗️Ahora comes the most important step. With a little hot oil in a paella pan and medium low heat, add the mixture and with a kitchen utensil (such as a spatula), we follow the contour, giving it a round shape. When we see that it is curdling, we lower the heat and turn it over, with the help of a large round plate. Repeat this step until the omelet is done and the cheese is melted. And enjoy!
