Prepare the base: 150 g of spinach, 2 tablespoons of whole wheat flour, one egg, a pinch of baking powder, 30 g of fresh cheese, salt, pepper and oregano. Mash everything together

Bake at 180-200 C in the oven for 15-20 minutes.

Prepare pesto: 2 tablespoons EVOO, 20 g Parmesan, a handful of basil, a couple of pine nuts and salt to taste.

Place sliced cherry tomatoes and burrata on the base, bake for another 15 mins.

Remove from oven and top with pesto.
