Cut the onion into julienne strips, the garlic into slices and the breast into squares.

Sauté the chicken in a frying pan with a drizzle of olive oil and season to taste, until slightly browned. Set aside.

In the same frying pan, fry the julienned onion and the sliced garlic with salt and add a little more oil.

Next, add the ginger, the fried tomato (1 tablespoon), the mandarin juice, the two dates (previously hydrated in hot water for 10 minutes), the handful of almonds and the two slices of pineapple cut into pieces. Cook, stirring continuously.
