Preheat the oven to 180º. If you have used chopped tomatoes (this is what I used), crush them with a blender to make a sauce, and put it in the base of the mold or ovenproof dish.

Cut the vegetables into slices and the Tofu into slices, and intersperse them in an order (I put eggplant, onion, tomato, zucchini and Tofu) until they are all in place. Add a splash of EVOO, and add the spices.

We put it in the oven and leave it for 30-40 minutes and it's ready!
