Heat the water with the pinch of salt and the cinnamon stick in the pressure cooker.

In the meantime, rinse the rice and barley well until the water comes out clean. If you do not have barley, you can make it with rice only or change it for millet.

When the water is boiling, add the lemon peel, rice and barley.

Let it cook in the smallest fire at minimum temperature for 1 hour.

After the time has elapsed, remove the cinnamon stick and the lemon peel and add the vegetable drink. In my case I use the oat drink. We beat with the mixer until we obtain a cream.

Garnish with cinnamon powder and at mealtime you can add toasted nuts (unsalted), ground sesame or flax seeds (to make them more digestible), raisins, etc.
