Preheat the oven to 200 °C.

Peel, wash and cut the potatoes into thin slices. Cover a baking dish with baking paper and place the potatoes so that they cover the bottom and sides. Bake for 20 minutes at 200 °C.

Peel the onions, cut them into strips and brown them in a frying pan with a dash of EVOO.

When the onion is golden brown, add the peppers.

When the peppers are ready, add the mushrooms and the diced ham. Add a pinch of salt and cook until all the liquid evaporates.

When the potatoes are ready, take them out of the oven and add the mixture of onion, peppers, mushrooms and ham.

In a bowl, mix the eggs, milk and cream. Beat and add salt and pepper.

Add the egg, cream and milk mixture to the dish. Put it in the oven and cook for about 30 minutes at 200 °C.

Add a little grated cheese and bake for 5 more minutes to melt.
