For the dough: put 250g of flour in a bowl, add a little salt and add the oil and warm water little by little until you get a ball that does not stick to your hands, as in the photo.

Spread the dough on a thickened baking paper trying to make it thin and put it in the baking pan where we are going to do it, in my case in a mold for cakes. Bake 15' 180 degrees.

For the filling: it can be filled with whatever you want or have at home. In my case, I have poached 3 leeks and 1 large onion until they are golden brown and I added sliced mushrooms and zucchini and I poached 5' more. Now I have added tofu, which I had never tried before and it looks very good, but you can add chicken or whatever you like.

Beat 3 eggs and a glass of milk in a bowl and add all the vegetables in the bowl, mix and add over the dough. Bake 15' 190 degrees.

When we see that it is set, put cheese on top and bake in the oven to gratin 2' and ready.
