Chop our onion, bell pepper, zucchini and mince the garlic. Add and cook with EVOO for 5-10' over low heat in a frying pan until all the ingredients are golden brown. Chop fresh parsley.

Once the vegetables are cooked, add our crushed tomato (it can be canned or homemade). You could also add a little tomato paste. Add cumin, paprika, pepper, salt. Let it all rest for a couple of minutes.

Make a hole for each egg you want to add and pour it on top of the vegetables. For 2 people it could be 4 eggs. Cover the frying pan with plastic wrap to let the eggs cook over low heat.

Add our previously chopped parsley and serve. It is advisable to take it to the table in the same pan with a wood underneath to keep it warm.
