Peel, remove the strands and boil the chopped yucca for 20-25min. Mash it together with the EVOO + salt. You will get a manageable dough. If you see that it gets stuck in your fingers, let it rest in the fridge for 3 hours.

To assemble the waffle: take a piece of yucca, add some chopped cheese and cover with a little more yucca. Put in the waffle iron until golden brown. Add oregano at the end if you like it.
