-For the BIZCOCK: Add in a bowl: - 150g of oat flakes/Oat flour - 6 dates - 2 eggs - 150 ml of oat milk - 1 sachet of yeast - 300ml instant coffee (I made two large cups of coffee) -2 or 3 teaspoons of pure cocoa MIX AND MASH EVERYTHING, add it to a bowl and bake in the oven for 25-30 minutes at 180 degrees. You know that it depends on the oven, keep an eye on it so it doesn't burn. I chose a large mold because then you have to cut it in half.

For the CREAM: - Crush 9 dates (depending on the sweetness you want) with 200ml of oat milk. - Add two tubs of Mascarpone cheese (they are 250g each) to the mixture of dates and milk and beat everything until it is a thick mass.

Once the cake is done, let it cool a little and cut it in half. Put one half of the sponge cake, pour coffee over it (it has to be juicy but not excessively wet); add the cream on top and sprinkle a little cocoa. Repeat the process with the other half of the cake, add the coffee and the cream and sprinkle again some cocoa and READY!

Let stand for 2-3 hours in the refrigerator.
