Chop the garlic and onion (quantities to taste) and leave it to fry over medium heat while dicing the potatoes.

Once the onion has colored, add the potatoes over medium heat so that they soften and gain flavor.

Once they have softened a little, add the diced zucchini.

Once the zucchini is done, lower the heat to low and add the egg(s) (depending on the amount of potato and zucchini) so that it sets gradually.

While it is curdling, add the parsley and stir. Optionally you can add ground black pepper, which gives it a more intense touch, but both options are delicious!
