Crush the tofu to release excess water.

Add EVOO in a frying pan and when it is hot add the diced vegetables (garlic clove, onion, carrot) and fry for a couple of minutes.

Add the spices to taste (lime or lemon juice, ginger, salt, coriander, paprika, cayenne, turmeric) and pour hot water and cook until the vegetables are tender. Once they are ready, grind them to make the sauce.

For the tofu we coat it with vegetable milk if you want a vegan dish or with egg and pass it through crushed corn flakes and/or breadcrumbs. Bake in the oven for about 30 minutes at 200 degrees.

Once everything is ready, we can serve it with salad and rice/quinoa or without!
