Seitan in sauce with vegetables and rice

We put water in a pot with a little oil and salt to taste, once the water comes to a boil add 100gr of rice and wait 8-10 minutes until we can remove it. While the rice boils, prepare the seitan by cutting it into cubes or strips, as we like and coat it in cornstarch. Heat a couple of tablespoons of oil in a frying pan and brown the Seitan.

While the seitan is cooking, cut the green bell pepper, the zucchini and the onion into strips. We will chop a clove of garlic or tender garlic and we will leave it ready to add to the frying pan.

Remove the seitan from the pan and place it on paper towels to remove excess oil. Then, in the same frying pan add all the vegetables and let them poach. While they are cooking, take a glass and add about 25 ml of soy sauce and half a spoonful of cornstarch, mix well and add to the frying pan when the vegetables begin to be to our liking.

After 5 minutes of stirring the sauce with the vegetables, add the seitan and stir for a few more minutes. After that time we remove everything and put it in the dish next to the previously boiled rice. We can put it directly on the rice, to the side or as we like it, as well as spice it with whatever we want, for example sesame, oregano, paprika, etc...
