Cream of Zucchini and Blue Cheese Cream Soup

Finely chop the onion and poach it in a pot with a little EVOO over medium heat so that it does not burn.

Cut the zucchini into slices or squares. When the onion is almost pochaita add the zucchini, salt and pepper and leave it a few minutes in the pot until it becomes soft.

Add the blue cheese and stir. Leave for 2 - 3 minutes more

Add water until it covers (no more so that the cream does not become too liquid) and leave over medium heat for about 20 minutes with the lid on.

Beat with a blender and serve. You can add a few pieces of walnuts to give it a special touch.
