Texturized soybeans with mushrooms and poached egg

First we hydrate the texturized soybeans. To do this we put it in a cup and cover it with boiling water. Season with salt and pepper and leave it for about 20-30 minutes until we see that it is soft. When it is ready we put it in a colander and remove all the water. We can drain it with our hands.

In a saucepan poach garlic and onion with a dash of EVOO. When ready, add the chopped mushrooms, soy and crushed tomato.

Let it cook for a few minutes and add grated cheese. Set aside.

On the other hand, we make the poached egg. We put plastic wrap inside a coffee cup and grease it. Carefully put the egg inside and close it with a knot or a rubber band.

Heat the water and when it starts to boil add the egg. Let it cook for about 5 minutes until we see that the egg white is done.

Put the egg on top of the soy with mushrooms and eat!
