Mix in a bowl the flour, the oil and the water until it is a homogeneous mixture that can be stretched in a mold. Depending on the size of the mold, you will need more or less mixture; I have used a mold of 25 cm of diameter approx.

In a frying pan, fry the onion and spinach and, when they are ready, add the flakes in small pieces.

In another bowl mix the beaten cheese with the two eggs. Season with salt and pepper and add the nutmeg.

Add the sofrito to the bowl of the previous mixture and pour it all into the mold.

Decorate with goat cheese and bake in the oven for 25 more minutes at 180º with fan.
