Rice with prawns, squid and carabinero shrimp

First we peel the prawns and the carabineros. Then with the heads and shells we put them in a pot with plenty of water, although the water will depend on the amount of heads that there are. Then we let it boil and we strain it, and with this broth we will make the rice. If they are already peeled we can make the rice only with water or we can buy a broth suitable for this recipe. The bodies of the shrimps and prawns we reserve for later.

While the pot is cooking in another pot or in the container that we are going to make the rice we start to make the sofrito. For the sofrito I have used olive oil (enough to cover the bottom of the pot), 1 head of garlic, 1 and a half onions, and 3 peppers. First we put the oil when it is hot we add the garlic, then the onion and finally the peppers and we wait for them to poach. In this part we can add the vegetables that we like.

When the vegetables are cooked add the tomatoes, I used 5. We can add them grated or crushed, I have added them crushed. Then we wait for it to reduce a little. And now is when I have added all the spices, I have used salt, pepper and saffron to taste, although we can add any other that suits you.

When the tomato has reduced add the squid and wait for it to cook.

Then add the prawns, shrimps and rice and add the broth that we have previously made and wait for the rice to be done and this will depend on the type of rice that we have used and how we like the rice (mellow, broth, drier ...). In the case of not having the broth, we can use water.
