Cod with ratatouille and potatoes (express recipe)

Preparación de la receta

In my case, I used frozen cod (from Pescanova), so the night before I left it defrosting in the refrigerator.

I used ratatouille that I already had prepared and stored in a vacuum jar. In case you don't have it, you can buy it or make it yourself.

First cut the potatoes into not too thick slices and season them with salt and pepper. We can steam them in a Lekue type case (this is how I did it, 6 minutes in the microwave), bake them in the oven or fry them in olive oil.

While the potatoes are cooking, heat the ratatouille, dry the cod well with absorbent paper and sprinkle fresh parsley on top.

Once the potatoes are ready, pour the ratatouille on top and set aside.

To cook the cod, you can do it like the potatoes (steamed, baked or fried). In my case I also did it in the microwave, 3 minutes.

Put the cod on top of the ratatouille and potatoes and eat! As you can see, it took me less than 15 minutes to prepare this dish.
