Take one large potato or two medium-sized ones, peel them and cut them into very thin slices or squares. The smaller the better, so that they fit in the waffle iron. Cut 1/3 of a white onion. Add the sliced potato and onion in a bowl with a pinch of salt and add 1 tablespoon of olive oil. Stir a little and put it in the microwave for 7 minutes at maximum power (mine is 800).

Meanwhile, heat the waffle iron. Once hot, spray a little oil on the plates to prevent them from sticking.

Remove the bowl from the microwave and pour 2 beaten eggs into the bowl, mixing well so that the texture is as homogeneous as possible. If the potatoes are very large when cut, they can be mashed in the same bowl.

Pour the mixture into the waffle iron (previously sprayed) closing it completely so that they take the waffle shape. It is usually done in 7 minutes, but it depends on your waffle iron, so you have to keep an eye on it.

Add the toppings of your choice. In my case, a mini-salad of cherries, garlic and basil with chopped chives on top. And enjoy. This recipe makes two waffles.
