Homemade mashed potatoes with texturized soybeans

First you put the texturized soybeans to hydrate in a bowl with water for about 20 minutes.

For the mashed potatoes: steam the potatoes in the microwave, or boil them. You mash them with a fork adding soy drink to make the puree. Then add the spices you want, I have added: garlic salt, oregano, garlic and onion powder and black pepper. Stir everything and the puree is ready. Add more or less drink depending on the texture you want.

In a frying pan make the texturized soybeans already hydrated (I think it would be better to add onion too, but I didn't have any), with a splash of wine and soy sauce.

It only remains to assemble it, I have assembled it in a round tupper. I put a layer of puree, then soy, another layer of puree, then soy and a last layer of puree. On top I put pieces of dehydrated onion (the Aldi jar) and oregano.
