Dice the tomato and spice with garlic powder, basil, salt and pepper. Sauté in a frying pan with a little EVOO and set aside.

Beat the eggs and pour them into a frying pan with a little EVOO. Let it spread over the surface of the frying pan and when the base is curdled and has little left to finish cooking, pour the tomato previously reserved on half of the omelet and add two slices of mozzarella. Then fold the tortilla in half and wait for it to finish cooking.

Remove the tortilla from the pan and serve on a plate.
