Make a good fire, and fry the chicken in the paella pan, and set aside. Use the same oil to make the sofrito: chopped peppers and beans and grated tomato until golden brown.

Pour the rice making a ridge: a little mountain as in the photo. IMPORTANT: do not stir the rice, just move the paella pan a little to spread the rice a little. Increase the heat so that it boils well.

Add also the squid, the clams and the prawns, reducing the heat a little so that it cooks slowly and well. Add saffron or coloring

After approximately twenty minutes, you will have your mixed paella on the fire ready, a challenge and a delicacy.

You can change the chicken for rabbit to give it more flavor, or add mussels or more peppers and beans, as you like.
