Make a good fire, and fry the chicken in the paella pan, and set aside. Use the same oil to make the sofrito: chopped peppers and beans and grated tomato until golden brown.

Mix the chicken with the vegetables and continue sautéing until ready. The base of a good paella is this sofrito.

In a separate frying pan, sauté the squid cut into rings, the clams and the prawns.

Pour the rice making a ridge: a little mountain as in the photo. IMPORTANT: do not stir the rice, just move the paella pan a little to spread the rice a little. Increase the heat so that it boils well.
