Cut the seitan into small pieces and flour it. Sauté in a pan and remove to a plate.

Chop the vegetables, I leave the carrot a little bit bigger than the onion and the bell pepper. Sauté in the same pan where we have marked the seitan. When it is poached, sauté also some mushrooms cut into slices, mushrooms or whatever you have. In this case I added Portobello and shitake. Let it cook a little.

Now you can add the potato, peeled and cut. Add two dashes of paprika, sauté quickly (so that it does not burn even remove from the fire a little and pour a splash of wine). Let the alcohol evaporate on the heat for about 5 minutes.

Pour the broth to cover. In this case the broth is from having cooked vegetables, I usually reserve it for stews and others. Let it simmer until the potato is tender.

Sometimes I add a couple of spoonfuls of tomato sauce that I have and it is also very good. Other times instead of red wine I use white, and when I have roasted peppers I add them in strips. In any case it is delicious
