Cook the previously washed rice under abundant water.

Sauté the onion.

Add the frozen peas, fresh spinach and cooked chickpeas, season with salt and pepper and mix.

Add the crushed tomato, salt and a little sugar to correct the acidity. Mix everything together.

In a small frying pan, add a little oil and when it is hot, add an egg and cover until the yolk is cooked.

Serve the rice and place the egg on top.
