Preheat the oven to 200° while you peel and cut the potatoes to your liking.

Mix the oil, oregano, paprika, garlic and onion in a deep dish. Spread the potato pieces well and place them on a baking tray without crowding them. Bake in the oven for 20 minutes at 180° (the time will depend on the thickness of the pieces).

While the potatoes are cooking, cook the eggs and the roast pork on the griddle. Salt the potatoes when placing them on the plate.
