Mashed zucchini with mushrooms

Prepare the puree: in a saucepan, pour some EVOO and add 2 chopped onions + 3 peeled and chopped zucchini. Minimum heat, cover and let it cook for 20 minutes (it will draw its own water and it will melt). We can add salt + parsley + turmeric. Once done, we grind it.

Prepare the mushrooms: in a frying pan with a splash of EVOO, add the chopped onion + mushrooms or chopped mushrooms. Cook over low heat and cover until the water runs out. Uncover, medium heat and sauté until golden brown. We can add salt + thyme + rosemary + parsley + turmeric.

Serve: 3 ladles of puree + a few spoonfuls of mushrooms to taste.
