Tacos pumpkin, cauliflower and beans

Preheat oven to 200 degrees. Cut cauliflower into florets and pumpkin into uniform cubes.

Put the vegetables on a tray with baking paper. Add the spices, salt, oil and mix well.

Bake for 25 minutes at 200 degrees.

After the time has elapsed, stir the vegetables and add the drained beans.

Bake another 10 minutes at 200 degrees. Flavor

Assemble the tacos with a base of mashed avocado, the vegetables, and beans +/- salsa+/- chopped fresh cilantro on top.

For the sauce: Plain yogurt, canned chipotle sauce, paprika and lime juice. Mix everything together, taste and adjust flavor.
