Transfer the mixture to a colander so that it releases all the EVOO. Leave a few drops in the pan, just enough so that the omelette does not stick. Beat the eggs and add a pinch of salt and black pepper, add to the cod mixture and pour into the hot frying pan. Cook the omelette on both sides for a few minutes.
