Potatoes with parsley "aioli" 😋

Wash the potatoes and cook them without peeling.

Meanwhile we make the "alioli": beat the hard-boiled egg, the tub of fresh cheese, the garlic (to taste), a teaspoon of mustard sauce (optional), salt to taste, fresh parsley and the AOVE. If you do not want it to come out green, do not add the parsley, and when it is done, add chopped parsley.

Cool the potatoes and peel them. Chop them and add the aioli, season with salt and add a little more EVOO if necessary.

Let it cool for at least 30 minutes in the refrigerator and it's ready 😊.
