Mix the cream cheese with the sweetener, vanilla flavoring and lemon zest.

Pour into the cup over the base we made and place in the microwave at maximum power for one minute, covered, just in case.

After one minute, we will cook it at 30-second intervals until the edges are done and the center is softer but not completely liquid (I had it 2'30 minutes).

Let cool, unmold and cover with your favorite topping. I put cinnamon, but a red fruit jam or raspberries would also work.

You can use Greek yogurt or QFB instead of cream cheese. And the base of the cake could be made with homemade granola or BP cookies, mixed with your favorite nut spread or date paste.
