Sauté the remaining oil with grated garlic and then add the mushrooms and chopped carrots, lime zest and lime juice, grated ginger, soy sauce without overdoing it, otherwise everything will taste like soy (leave a little for later), salt, chopped nuts and cook for about 30 minutes.
