If your cod is dry or salted. Desalt in a bowl with water for 24-48 hours (depending on the thickness of the cod), changing the water 3-4 times.

Put the oil in a casserole to heat it. While we drain the cod, wash and chop the onion, green pepper, garlic and potatoes.

Sauté the onion and the green bell pepper in the pan with a little salt, to sweat the onion and cook it before.

When the onion is transparent. Add the garlic and fry a little.

Add the potatoes to the casserole and sauté with the vegetables.

Cover with water (it can also be fish or vegetable broth), add the bay leaf and when it starts to boil, cook for 15-20 minutes or until the potato is tender.

When there are 5 minutes left to finish cooking the potatoes, add the cod. Cook for 5 more minutes.

Add the fresh parsley and reduce the broth a little, if we do not like it so liquid.
