Clean the quinoa and cook it with double the amount of water and a little salt until it has absorbed all the water.

Meanwhile, heat a little olive oil in a frying pan and add the garlic and onion.

When the onion is poached, add the bell pepper or any other vegetable you like.

Once the quinoa is ready, add it to the vegetables and season to taste.

Open the sweet potatoes in half with a knife and prick them a little on all sides. Put them in the microwave for 10 minutes.

When they are soft (and careful because they burn) open the sweet potatoes a little more and add the mixture of quinoa and vegetables.
