Put the onion, garlic, carrot and bell pepper in a frying pan with a splash of EVOO and poach until everything is well done. Add a little salt and pepper

Add the minced chicken meat and add all the spices. Cook the meat. Add the white wine and let it evaporate. Then add the crushed tomato and simmer for about 10 minutes.

Put the pasta sheets in hot water for 10 minutes... Mine were precooked

For the béchamel sauce: Melt the butter, add the flour while stirring and then the milk.... Keep stirring until it thickens, add salt, pepper and nutmeg. Once ready, add half of it to the meat and vegetable mixture and reserve the other half.

All that remains is to assemble the lasagna. We put a base of pasta, then the meat with the sauce and pasta, and so on until 3 layers are assembled.

In the last layer we put the reserved bechamel sauce
