Cut the ripe peaches, no matter the size. Add the water, the juice of half a lemon and the vanilla. Cook over medium heat and uncovered for about 30 minutes. Then add the agar agar and cook for about 3 minutes more and remove from the heat.

Remove from heat, let cool, pour into small glasses and place in the refrigerator. Leave completely without air and consume within a week maximum.
