Boil the potatoes in a saucepan with plenty of hot water, a pinch of salt and a bay leaf (optional) for about 18 minutes.

While waiting for the potatoes, we cut into small cubes the onion and the garlic clove, peel and grate the carrot and cut about five/six leaves of chard including the stalks.

Now in a hot frying pan put a dash of extra virgin olive oil, garlic and onion and sauté until golden brown, then add salt, pepper and carrots stirring constantly for about 4 minutes. Once this time has elapsed, add the chard and cook everything together for another three/four minutes.

Once the potatoes are cooked and a little cooler (we don't want to burn them), grate them and set aside.

In a bowl we break and beat our eggs, add the mixture of our previously cooked vegetables, the grated potatoes and the feta cheese (I used 2/3 of the Mercadona jar), mix well, add salt and pepper and let stand for a few minutes.

Now we are going to heat a frying pan with a drizzle of olive oil and pour our mixture, move it a little bit so that it sets and leave it over medium-high heat for about 3 minutes, with the help of a plate we turn our tortilla and repeat the process.
