Cut the onion, carrot and zucchini into small cubes.

Place the vegetables over medium/low heat in a frying pan with a tablespoon of EVOO, salt and spices (amounts to taste) for 20 minutes.

When the vegetables are cooked, add the soybeans (previously hydrated for 30 minutes and drained). Add more salt and spices if necessary.

After about 5-10 minutes add the can of crushed tomato and stir. Leave on low heat for 10 minutes.

Let it rest for another 10 minutes and it is ready.
