In a frying pan with a little olive oil add a clove of garlic and the onion until it caramelizes. Add two grated tomatoes and cook until it reduces and has the texture of tomato concentrate.

Drain the zucchini very well, add a little salt, the egg and a spoonful of corn flour. Add flour until you get the desired consistency (like wet sand).

Spread the dough on a baking sheet and bake in the oven at 180 degrees for 10 minutes to dry and gain consistency.

Remove from the oven, add the tomato paste and the sliced mozzarella. Add basil and oregano to taste and bake for another 10 minutes at the same temperature.
