Cut the onion into julienne strips and poach it with a drizzle of oil over low heat for an hour until it caramelizes. If we see that it dries out we can add a little water.

Seal the sea bream fillets and set aside. In the same frying pan we will carefully brown the chopped garlic, to which we will add the onion once it has caramelized. Add a pinch of salt and the vinegar. Let it cook for 3 minutes.

Remove from the heat and add the water, oregano, paprika and sea bream. Cook everything together for 10 minutes until the sauce reduces.
