Baked feta salad with lemon

Put the feta cheese (whole) on a baking tray with parchment paper, grate the peel of a lemon (small), grind the coriander seeds in a mortar and pestle and put them on top of the cheese, add a little pepper and a little olive oil.

Put the cheese in the oven for 25° (previously heated), until it is golden brown.

While it is baking, cut the tomatoes and put them in a nice dish, season with salt and pepper, grate a lemon on top and pour a little olive oil and juice of half a lemon.

Mix everything together, add the diced cheese to the tomato and add some chopped mint, it's up to your taste!
