For the rice: boil according to instructions for about 25 min.

Place the onion, garlic and carrot in a frying pan with EVOO.

After 5 minutes, add the mushrooms and tofu (previously drained and diced).

When everything is done, add the soy beverage (any vegetable drink is fine for vegan option, or milk or cooking cream if not) and the spices, in my case: salt, black pepper, cumin, turmeric and curry (the most), and stir.

Finally, add the rice and the cashew nuts and mix so that they take flavor and enjoy!
