Eggplant stuffed with tuna at Lekue

Cut the eggplant lengthwise and place it in the steamer case. Add 4 tablespoons of water and a little salt and microwave for 7 minutes.

While the eggplant is in the microwave, cut the red bell pepper into small pieces.

Remove the eggplant from the microwave and let it cool. Meanwhile we are going to cook the bell pepper in the case. We put it in and cook it for 5 minutes.

While the bell pepper is cooking, hollow out the eggplant, leaving an edge to keep it full-bodied. Cut the tomato into small pieces.

When the time for the peppers has elapsed, add the eggplant pulp, tomato and tuna to the steam case. Microwave for another 5 minutes.

Once we take out the case, we stir well all the ingredients and fill the eggplant with this stuffing.

Finally put some grated cheese on top and put the eggplant in the dish with the cheese in the microwave for 1 minute so that the cheese melts. If you like the cheese crunchy you can put it to gratin in the oven or microwave with grill.

Once the cheese is melted, the only thing left to do is to enjoy the eggplant😊.
